Instructor BioMonica Adolphe, Owner of Elegant FitnessMonica Adolphe is the owner of Elegant Fitness and has been teaching fitness for nearly 19 years. Her journey into fitness began when an opportunity arose at her previous job for a Zumba instructor. Encouraged by her manager to get certified, Monica took the leap, got certified and has never looked back. Today, she holds 35 different fitness certifications, including Aqua Kickboxing, Aqua Pole, Aqua Circuit, Zumba Gold and Zumbini. This wide range of certifications allows her to work with all ages, from infants and toddlers to adults of all fitness levels. Monica’s teaching style is centered around motivating and empowering her students. She believes in speaking life into them during workouts, encouraging them to break through any mental or physical barriers they may face. Her philosophy is simple: often, it’s our mindset that holds us back from reaching our full potential. Monica’s goal is to help her students shift their mindset and push past limitations to achieve their fitness goals.

Daytona Beach has a rich history of education, dating back to the late 19th and early 20th centuries when schools and institutions were established to serve a growing community. The city is perhaps best known for its strong legacy in historically Black education, highlighted by the founding of Bethune-Cookman University in 1904 by Mary McLeod Bethune, which became a beacon of learning and leadership. Over the years, Daytona Beach has continued to expand educational opportunities through public schools, community programs and partnerships that support lifelong learning for residents of all ages. In 1957, Daytona State College was established as Daytona Beach Junior College, later becoming Daytona Beach Community College and, in 2008, Daytona State College as it expanded into a four‑year institution offering bachelor’s degrees. Also contributing to the city’s academic landscape is Embry‑Riddle Aeronautical University’s Daytona Beach campus, established in 1965 and now recognized internationally for its aviation and aerospace programs. Together, these institutions reflect Daytona Beach’s rich and evolving commitment to education and community development.

Recipe of the Week: No-Bake Apple PieRecipe submitted by Jaclyn Allen, participant in the 2026 Mayor’s Fitness Challenge.
This no-bake apple pie is a delicious, healthy twist on a classic favorite! It’s vegan, gluten-free, high in fiber and made with no added sugar. Perfect for guilt-free indulgence. IngredientsCrust: - 1 ½ cups ground almonds
- 1 cup ground pine nuts or cashews
- 2 tbsp orange juice
- Zest of ½ lemon
- 1 cup ground flax seed
- 3 tbsp raw, unfiltered honey
- 2 tbsp lemon juice
Filling: - 5 sweet apples, quartered
- Juice of 1 lemon
- ¾ cup currants or raisins
- 1 ripe banana
- 2 tsp cinnamon
DirectionsMake the crust: In a large bowl, combine all crust ingredients and form into a ball. Cover and refrigerate for 30 minutes. Sprinkle the bottom of a 9-inch pie shell with 1 tbsp ground almonds. Press ¾ of the dough evenly into the pie shell to form the crust, fluting the edges with your fingers. Cover with plastic wrap and refrigerate for several hours. Prepare the filling:- Process 2 quartered apples with juice of ½ lemon until chunky; spread evenly in the pie shell.
- Process the remaining 2 apples with banana, currants or raisins, juice of ½ lemon, and cinnamon until mushy; spread over the first apple layer.
Top the pie:- Crumble the remaining ⅓ of the crust over the apple mixture.
- Garnish with extra raisins or currants for decoration.
